Last Sunday we opened the doors of Maccheroni Alfalfa, our fourth Italian restaurant in Seville and the sixth of the GMI Group.

Right in the center of Seville, Maccheroni Alfalfa will transport you directly to Italy. Its doors open and you are greeted by a beautiful sausage slicer that slices the Bologna mortadella that we serve as house antipasti. At his side, another king, the Parmesan Reggiano, which pleases the eyes and nose.

What stands out in Maccheroni Alfalfa? The contemporary Neapolitan sourdough pizza, its fresh handmade pasta laboratory, Italian products with designation of origin, an extensive wine list from all over Italy, non filtrate beer, or multigrain bread with sourdough yeast from own elaboration, among other elements.

 

The Eccellenza of Pizza Napoletana

We prepare the dough for our pizzas following the traditional canon of Neapolitan pizza but betting on a recipe that evolves positively to improve the digestibility of the dough. The result is a pizza that stands out for its lightness and its hydration, in which 86% of the dough is water.

You will find very unique pizzas like La Mortazza with Bronte pistachio pesto, Agerola fresh cheese, Bologna mortadella and fresh cottage cheese, that will make your mouth water. the carbonara they also make it in a very unique way with guanciale (Italian pork jowls), fresh organic egg and mozzarella Fior di latte di Agerola DOP.

Maccheroni Alfalfa has its own fresh pasta laboratory open to diners, who can see how the different types of pasta are made: Spaghetti, Tagliatelle, Raviolini, Gnocchi, Maccheroni and Girasoli.

Among its exclusive recipes, the Girasoli with Baccala, fresh pasta stuffed with cod and potato with saffron cream and the fresh raviolini di ricotta, parmigiano and mortadella with pistacchi sauce.

Italian delicatessen and DOP product

As soon as you enter you are greeted by an immense Parmesan Reggiano PDO and a beautiful Italian sausage slicer that cuts the Bologna mortadella that we serve as house antipasti.

We have opted for gourmet products from all over Italy such as Mozzarella di Bufala Campana DOP, Burrata di Andria IGP, Mozzarella Fiordillatte di Agerola, Guanciale, Grana Padano, Bologna Mortadella, Prosciutto crudo di Parma, among others. Furthermore, we have carefully selected our wines and among them there are notable denominations such as Negramaro, Chianti and Montepulciano.
